Pumpkin season and fall is my favorite time of the year! This morning was a huge win for me, my very very picky eater loved the pumpkin muffins I made for breakfast. He ate 3!!! This was amazing.
Last fall a friend told me about this recipe for the easiest pumpkin muffins and she was so right. Open the cake mix and pour into a bowl, open the can of pumpkin and pour into bowl and mix! Thats it. I did spray the muffin tins so the muffins wouldn't stick. Then I used a tablespoon to scoop it into the muffin tins. I followed the directions on the cake box and cooked for about 15 mins and checked them with a fork, if the fork came out clean, the muffins are finished.
This made my house smell like pumpkin and it was such an easy breakfast. Now I am wondering how the muffins would freeze to make a big batch. I am all about food preparedness because you never know what will happen with your kids and family.
